| The best of what's in season The SOVA menu is based on a simple idea: take the best of what's available and leave it untouched. We work with seasonal produce, hand-select suppliers, and update the menu several times a year not to follow trends, but because summer tomatoes and winter tomatoes are two different products and should be treated differently.
